			<content:encoded><![CDATA[<p>I had an idea to bake some cool monster cupcakes for my friend’s birthday party. It must be a pain for non-vegans to have a vegan to cater for so I thought I’d take something that everyone will enjoy eating. I feel it is important to educate people that vegan food can be fun and tasty.  These were a real hit and with all the requests for the recipe I figure it would be easier to get the recipe on here straightaway.</p>
<p>After looking up monster cupcakes on Google images I found some very creative cookie monster cupcakes that were so cute. Unfortunately I cannot credit anyone as I saw several recipes and pictures (but none were vegan). So I figured I would have to create a vegan version!</p>
<p>The cookies I used were <a href="http://www.the-green-diva.com/2010/02/vegan-chocolate-chip-cookie-recipe/">Vegan Chocolate Chip Cookies</a> and I made them with ¼ less sugar as the icing and marzipan on the cupcake are sweet enough in my opinion.<br />

<p><strong>Cupcake ingredients</strong></p>
<p>1 cup wholemeal bread flour<br />
2 teaspoons wheat bran<br />
1 cup soya yoghurt<br />
1/3 cup oil<br />
¾ cup brown sugar<br />
1 teaspoon baking soda<br />
½ teaspoon baking powder<br />
Pinch salt</p>
<p><strong>Instructions</strong></p>
<p>•    Preheat oven to gas mark 4<br />
•    Mix the sugar and soya yoghurt well until there are no lumps. Add oil and mix thoroughly.<br />
•    In a separate bowl mix together the rest of the dry ingredients.<br />
•    Add the dry ingredients in three batches ensuring that there are no lumps.<br />
•    Pour into baking liners (I fill about halfway or less as I don’t use a muffin pan). Bake for 15-20 minutes, checking that a toothpick inserted in the middle comes out clean.<br />
•    Let the cakes cool before decorating.</p>
<p><strong>Icing ingredients</strong></p>
<p>1 cup brown icing sugar (I use Billington’s Golden Icing sugar)<br />
Three tablespoons of vegan margarine (I use Pure)<br />
1 teaspoon blue food colouring</p>
<p>Slowly beat the sugar in batches into the spread, use a big bowl as this can get messy.<br />

<p><strong>Blue sprinkles ingredients</strong></p>
<p>½ cup desiccated coconut<br />
1 teaspoon blue food colouring</p>
<p>Mix well to make the coconut blue.</p>
<p>To decorate the cupcakes spread a generous amount of the blue icing on first and then apply the blue sprinkles.</p>
<p>All you need now is some marzipan and dark chocolate chips for the eyes (Sainsburys have vegan friendly options). Don&#8217;t forget to have them at odd angles.<br />
Break a cookie in half and squash into place where the monsters mouth is. And that’s it!<br />
