I adore sweet potatoes and they are very good for you (I even include them in my top ten vegan superfoods.) One thing I struggled with initially when turning vegan was finding tasty baked potato fillings. I find I much prefer sweet potatoes as they fill me up for longer. This is my favourite filling for a sweet potato as it complements the flavour perfectly.
Ingredients
2 sweet potatoes
3/4 cup cous cous (cooked with a tsp of mixed dried herbs)
1/4 cup cooked chickpeas
Tbsp of sesame seeds
2 tsp of extra virgin olive oil
1 tsp lemon juice
Nori flakes to taste
Method
Preheat oven to Gas mark 6.
Pierce the sweet potatoes a few times with a fork to ensure they cook thoroughly.
Bake potatoes in oven for thirty minutes.
Meanwhile blend the chickpeas, lemon juice and sesame seeds.
Mix with the cous cous.
Cut the baked sweet potatoes through the middle and add a spoon of olive oil in each.
Spoon the cold cous cous into the cooked sweet potatoes.
Sprinkle with some nori flakes and enjoy!
