Even though spring is just around the corner it is rather chilly here in the UK. I do love a bowl of hearty warm soup in the cold weather, here’s one of my favourites:
Ingredients:
4 potatoes (peeled and sliced)
2 parsnips (peeled and sliced)
Finely chopped fresh red chilli
Vegetable stockĀ (3-4 cups)
Salt and pepper
Bring stock to boil, add parsnip, chilli and potatoes. Add a little salt and pepper. Simmer for about twenty five minutes until the vegetables are cooked well. Blend and season with more salt and pepper if needed. Sprinkle with fresh coriander, and you’re done!
