Vegan Cookie Monster Cup Cake recipe
I had an idea to bake some cool monster cupcakes for my friend’s birthday party. It must be a pain for non-vegans to have a vegan to cater for so I thought I’d take something that everyone will enjoy eating. I feel it is important to educate people that vegan food can be fun and tasty. These were a real hit and with all the requests for the recipe I figure it would be easier to get the recipe on here straightaway.
After looking up monster cupcakes on Google images I found some very creative cookie monster cupcakes that were so cute. Unfortunately I cannot credit anyone as I saw several recipes and pictures (but none were vegan). So I figured I would have to create a vegan version!
The cookies I used were Vegan Chocolate Chip Cookies and I made them with ¼ less sugar as the icing and marzipan on the cupcake are sweet enough in my opinion.

Cupcake ingredients
1 cup wholemeal bread flour
2 teaspoons wheat bran
1 cup soya yoghurt
1/3 cup oil
¾ cup brown sugar
1 teaspoon baking soda
½ teaspoon baking powder
Pinch salt
Instructions
• Preheat oven to gas mark 4
• Mix the sugar and soya yoghurt well until there are no lumps. Add oil and mix thoroughly.
• In a separate bowl mix together the rest of the dry ingredients.
• Add the dry ingredients in three batches ensuring that there are no lumps.
• Pour into baking liners (I fill about halfway or less as I don’t use a muffin pan). Bake for 15-20 minutes, checking that a toothpick inserted in the middle comes out clean.
• Let the cakes cool before decorating.
Icing ingredients
1 cup brown icing sugar (I use Billington’s Golden Icing sugar)
Three tablespoons of vegan margarine (I use Pure)
1 teaspoon blue food colouring
Slowly beat the sugar in batches into the spread, use a big bowl as this can get messy.
Blue sprinkles ingredients
½ cup desiccated coconut
1 teaspoon blue food colouring
Mix well to make the coconut blue.
To decorate the cupcakes spread a generous amount of the blue icing on first and then apply the blue sprinkles.
All you need now is some marzipan and dark chocolate chips for the eyes (Sainsburys have vegan friendly options). Don’t forget to have them at odd angles.
Break a cookie in half and squash into place where the monsters mouth is. And that’s it!
