The Ultimate Ginger Biscuit

I love Ginger as it has such fantastic anti-inflammatory properties. Now that I am off all medication I eat more ginger and turmeric to keep any Lupus related inflammation at bay. This recipe has been perfected over time and is really tasty.

Ginger Biscuit
Dry Ingredients
1 cup brown flour
3/4 cup wheat bran
1 teaspoon baking powder
pinch of salt
1/2 cup brown sugar
9 chopped crystallised ginger

Wet Ingredients
1/3 cup oil
1 tsp blackstrap molasses
1/3 cup rice milk

Preheat oven to gas mark 5. Grease baking tray with oil. Add dry ingredients into bowl and mix well together. Mix wet ingredients together in a large bowl making sure the molasses are absorbed into oil, then add dry ingredients. Mix everything well together with a large spoon. Use around half a handful of dough to create a ball and flatten with hands slightly to create flat biscuits.

Bake for about 10-15 minutes or until they are golden brown. Let the biscuits cool before removing from baking tray. This recipe makes six large biscuits.
