My mother loves to have something with her morning chai and asked me to bake her some savoury cookies. She is trying to limit her sugar intake so I figured it was a great idea. I remember she liked cumin biscuits we used to buy years ago in Leicester, I figured I’d have a go at making my own vegan version!
Ingredients
¼ cup corn flour
1 cup brown flour
1 ½ tsp roasted and roughly ground cumin
1 tsp baking powder
½ teaspoon salt
¼ teaspoon ground black pepper
1/3 cup oil
1/3 cup rice milk

Mix the flour, cumin, baking powder, salt and pepper in a bowl. Mix oil and rice milk separately and add to dry ingredients. Fold over quickly and make sure you don’t knead the mixture too much otherwise the biscuits will be too hard.
Roll out the mixture and it will be oily so carefully cut out shapes using a cookie cutter and put on to an oiled baking sheet.
Bake for 15-20 minutes at gas mark 5. This recipe makes twenty small and incredibly tasty biscuits.
