Vegan Apricot Flapjack recipe

This was my first attempt at making a flapjack and I was pleasantly surprised at how well it turned out. The measurements are approximate as I added extra sugar and oats to get the consistency correct.
Flapjack
Ingredients

2 cups oats
200g vegan margerine (I used Pure)
3/4 cup unrefined brown sugar
Five chopped dried apricots

Melt the margerine with the sugar until both melt- it will look odd as the sugar will go brown but keep on mixing with a spoon until it is all absorbed. Then slowly add oats mixing it carefully, add in the dried apricots. The consistency should resemble porridge. Pour the mixture into an oiled baking tin and bake at gas mark 5 for 20 minutes or until the flapjacks turn golden brown. Gently score the flapjacts into the shapes you require with a breadknife. Let the flapjacks become cool and then remove from the tray carefully. The flapjacks should be stored in an airtight container in a cool place.
