Nothing beats a good plate of stir-fried noodles when you want a quick satisfying meal. It is a really healthy option too when made right. Here is a recipe that I use quite often to feed my hungry belly fast.

Ingredients
500g of vegetables (I used red and yellow peppers, carrots, spinach, bean sprouts and water chestnuts)
100g noodles
2 tbsp vegetable oil
1 tsp cumin powder
1/4 tsp turmeric
1 tsp soy sauce
grated fresh ginger
squeeze of fresh lemon juice
Cook the noodles following packet instructions.
Heat the oil in a wok.
Stir-fry vegetables for 2 minutes.
Drain the noodles.
Add the cumin powder, turmeric and soy sauce.
Add noodles.
Fry for another 2 minutes.
Season with plenty of fresh grated ginger and lemon juice.
