Fig Biscuit recipe

Once every few months I have cravings for biscuits and cookies. I might only eat two but they have to be free of eggs, preservatives and be full of nice fresh ingredients. I have found it is better to make them myself as I am really fussy. This recipe produced some nice biscuits which are quite filling.

Ingredients

2 1/2 cups brown flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 cup almond butter
1/2 cup unrefined brown sugar
1/4 cup icing sugar
2 tablespoon oil
1 chopped chunk of crystallised ginger
3 finely chopped dried figsdsc03577

Preheat oven to gas mark 4 (around 180 degrees). Mix the flour, baking powder and salt in bowl. Mix almond butter and sugar until fluffy, then add oil. Add flour, nuts, chopped figs and ginger. Add a little water it it is dry. Clingfilm dough and stick in fridge for ten minutes. Roll out dough and use cookie cutters to cut out shapes as desired. Dust with a little brown sugar and bake for 30 minutes.
