Yesterday I baked the most crumbliest and tastiest cookies ever. They passed the Mum and colleagues test with flying colours and from the nine huge cookies I made only two remain. I feel I should share such a simple and tasty vegan recipe for those of you who like to bake.

Dry Ingredients
1 cup brown flour
1 cup oatmeal
1 teaspoon baking powder
pinch of salt
2/3 cup brown sugar
1 finely chopped dried fig
Wet Ingredients
1/3 cup oil
1/3 cup cashew butter
1/3 cup rice milk
Preheat oven to gas mark 5. GreaseĀ baking tray with oil. Add dry ingredients into bowl and mix well together. Mix wet ingredients together in a large bowl and then add dry ingredients. Mix everything well together with a large spoon to create the cookie dough. Use around half a handful of dough to create a ball and flatten with hands slightly to create cookies.
Bake for about 10-12 minutes or until they are slightly golden. Let the cookies cool before removing from baking tray.
The variations that can be made on this recipe are endless. Add a tablespoon of cocoa and you have some decadent chocolate cookies. Or throw in chopped dried apricots and substitute cashew butter for almond butter for even more nutrition. I make these to have as a tasty snack to keep me going when the munchies hit me.
